Southern Fried Corned Beef and Cabbage

- 1 lb corned beef, cooked
(variation: 1 lb bacon)
- 2 heads of cabbage, chopped
- 1 8 oz. bag of Cherry De-Lite Dried Cherries
- 1 small onion, diced
- 1 stick butter
- 2 tablespoons sugar
- 1 tablespoon black pepper
Place the corned beef (bacon) and butter into a large pot over medium heat. Season with salt and pepper. Cook for about 5 minutes, or until crisp.
Add cabbage, Cherry De-Lite Dried Cherries, onion, and sugar to the pot; cook and stir continuously for 5 minutes, until tender.
Great way to add a new dish to St. Patrick Day celebrations... or to use up the left overs!
