Cherry Rice Pudding

¼ cup butter melted

3 eggs

3 cups milk

½ cup sugar (original recipe calls for 1 cup)

2 tsp vanilla extract

¼ tsp ground nutmeg
½ tsp cinnamon

½ tsp salt

2-1/2 cups cooked rice

1 cup Cherry De-Lite dried cherries

1 cup flaked coconut


Place melted butter in a 13 X 9 baking dish, set aside.In a large bowl combine the eggs, milk, sugar, vanilla, nutmeg, cinnamon and salt.Stir in the rice and cherries.Transfer to baking dish.Bake uncovered at 325 for 30 minutes.Sprinkle with coconut and back 15 minutes longer.Serve warm.For an extra treat top with Cherry De-Lite cherry syrup!
