Cherry De-Lite Molton Lava Chocolate Cake

Ingredients

  • 8 ounces bittersweet chocolate chips

  • 8 tablespoons (1 stick) butter

  • 2 eggs

  • 3 egg yolks

  • ¼ cup sugar

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • ⅓ cup all-purpose flour

  • 6–8 tablespoons Cherry De-Lite Cherry Pie Fill

  • Butter and cocoa powder (for preparing ramekins)

Step-by-step instructions:

  • Preheat oven to 425°F (218°C).

  • Generously butter 6–8 ramekins, then dust with cocoa powder, tapping out excess.

  • Melt chocolate chips and butter together in a double boiler or microwave, stirring frequently until smooth. Let cool slightly.

  • In a bowl, beat eggs, egg yolks, sugar, vanilla, and salt until thick and pale.

  • Fold the chocolate mixture into the egg mixture, then gently fold in the flour until just combined.

  • Divide half of the batter evenly among the ramekins.

  • Spoon 1 tablespoon of Cherry De-Lite Cherry Pie Fill into the center of each, then cover with the remaining batter.

  • Bake for 10–12 minutes, until edges are set but centers are still soft and jiggly.

  • Let rest for 1 minute, then invert onto plates or serve directly from ramekins.

  • Serve warm, optionally with extra Cherry De-Lite Cherry Pie Fill drizzled on top.
