Montmorency, France - World Famous Tart Cherry Clafoutis

The Montmorency cherry, a popular tart cherry variety, is named after the Montmorency Valley in France, where it was first cultivated. This region, a commune in the northern suburbs of Paris, has a rich history and cultural heritage. This recipe is so simple and so delicious it is bound to be a must make for every event!
INGREDIENTS
- 200 ml (0.8 cup) double cream
- 1 vanilla pod
- 100 ml (0.4 cup) milk
- 3 eggs
- 50 g (4 tbsp) caster sugar
- 70 g (5 2/3 tbsp) plain flour
- 2 cups Cherry De-Lite Cherry Juice Drink
- 450 g (2 cups) tart Cherry De-Lite dried cherries
- icing sugar for dusting
METHOD
- Put the dried cherries and cherry juice in a small sauce pan and simmer for 10 min or until the cherries are plump and juice is almost gone. Set aside and let it cool to room temperature.
- Preheat the oven to 180C (350F).
- Put the cream in a small saucepan.
- Split the vanilla pod in two, scrape out the seeds and add the whole lot to the cream.
- Heat gently for a couple of minutes, then remove from heat, add the milk and cool.
- Strain to remove the vanilla pod.
- Whisk the eggs with the sugar and flour, then stir into the cream.
- Add the cherries and remaining juice and stir well.
- Pour into a 23 cm (9 inch) round baking dish and bake for 30-35 minutes, or until golden on top.
- Dust with icing sugar and serve.
