Fresh baby spinach: 1 pound (454 g)

Cherry De-Lite Cherries: 4 cups (approximately 1 pound or 454 g)

Walnuts: 3/4 cup (90 g), coarsely chopped

Feta cheese: 1 cup (113 g), crumbled

Red onion: 1/4 cup (30 g), thinly sliced (optional)

Cherery De-Lite Vinaigrette: 1 cup (240 ml)

Orange juice: 1/4 cup (60 ml)

Orange zest: 1 teaspoon (5 g)

Instructions:

Preheat the oven to 325°F (163°C).

Place the chopped walnuts in a flat baking dish and toast in the oven for 5 to 8 minutes, or until lightly browned. Remove and let cool.

Place the fresh baby spinach, crumbled feta cheese, Cherry De-Lite tart cherries, sliced red onion (if using), and the cooled toasted walnuts in a large salad bowl. Toss to combine.

Refrigerate the salad mixture for 1 hour to chill.

In a small bowl, whisk together the Cherry De-Lite Vinaigrette dressing, orange juice, and orange zest.
