Cherry De-Lite Spinach Salad

A refreshing and flavorful salad combining Cherry De-Lite tart cherries, crunchy walnuts, crisp apples and tender spinach, often enhanced with a tangy cheese like feta or goat cheese, is a popular choice for a light meal or side dish.

Ingredients:

  • Fresh baby spinach: 1 pound (454 g) 

  • Cherry De-Lite Cherries: 4 cups (approximately 1 pound or 454 g)

  • Walnuts: 3/4 cup (90 g), coarsely chopped 

  • Feta cheese: 1 cup (113 g), crumbled 

  • Red onion: 1/4 cup (30 g), thinly sliced (optional) 

  • Cherery De-Lite Vinaigrette: 1 cup (240 ml) 

  • Orange juice: 1/4 cup (60 ml) 

  • Orange zest: 1 teaspoon (5 g) 

Equipment needed:

  • Baking sheet

  • Large salad bowl

  • Small mixing bowl

  • Whisk

  • Oven

Instructions:

  1. Preheat the oven to 325°F (163°C).

  2. Place the chopped walnuts in a flat baking dish and toast in the oven for 5 to 8 minutes, or until lightly browned. Remove and let cool.

  3. Place the fresh baby spinach, crumbled feta cheese, Cherry De-Lite tart cherries, sliced red onion (if using), and the cooled toasted walnuts in a large salad bowl. Toss to combine.

  4. Refrigerate the salad mixture for 1 hour to chill.

  5. In a small bowl, whisk together the Cherry De-Lite Vinaigrette dressing, orange juice, and orange zest.

  6. Pour the prepared dressing over the chilled salad just before serving and toss to coat.
