Cherry De-Lite Rhubarb Crisp Bars

Soak 4 oz. of Cherry De-Lite dried cherries in water for 1 hour to plump slightly prior to beginning the crust.
Pre-heat the oven to 350 degrees
Crust:
Mix the following ingredients together and then mix the softened butter into the oatmeal mix.
- 1.5 cups oatmeal
- 1.5 cups flour
- 1 cup brown sugar
- 1/2 teaspoon baking soda
- dash of salt
- 1 cup of butter
Place 3/4 of the crust mix into a 9”x13” cake pan and bake for 20 minutes.
While the crust bakes, begin to mix the Cherry De-Lite and rhubarb mix.
Cherry De-Lite/Rhubarb mix:
- 3 cups rhubarb
- 1.5 cups sugar
- 1/4 cup water
- 2 Tablespoons corn starch
- 1 teaspoon vanilla
- plumped Cherry De-Lite dried cherries (drain the water before adding)
Once the crust is ready, pour the Cherry De-Lite Rhubarb mixture evenly over the crust. Sprinkle the remaining oatmeal crust mix over the top.
Bake for 20 minutes at 350 degrees
